Baked Cheese Cake by aunty loh

I baked a cheese cake on 29/9/08. I have planned to bake a cheesecake long time ago and this was my very first attempt to bake a cheese cake. I’m glad that it is as tasty as sold outside although it is abit ugly :P I would like to bake for second time since i know which area i have done wrong. I want to bake a perfect cake for my hubby.

My brother like this cheese cake. He is the one who always complaint that my cake are used to feed dog. However, this time, he enjoyed the cake very much and he finished 50% of the cake :D I want to share this recipe to everyone who are interested to bake it.

Ingredient needed

Base:

200 gm Chocolate Digestive Biscuit
90 gm melted butter

1. Crashed the digestive biscuit or blended it to powder form.
2. Mix the melted butter into blended biscuit and mix well.
3. Press the digestive biscuit into a pan and refrigerate before use.

Filling

Cream cheese 500 gm
Castor sugar (1)175 gm
Egg yolk 4 nos
Egg white 4 nos
Juice and skin (grated) of half lemon
Castor sugar (2)87 gm
Whipping cream 250 gm

1. Beat cream cheese and sugar (1) until creamy – about 3 mins at medium speed.
2. Add in egg yolks one at a time and mix well. Then add in lemon juice and grated lemon skin.
3. Add in whipping cream and mix it.

4. Whisk egg white and sugar (2) to a soft peak.

5. Add Step 4 into cheese mixture and mix well.

5. Pour cheese mixture (step 4) onto the prepared cake pan with Base.

6. Wrapped the Cake Pan with 2 layers of Aluminum Foil and put it on a tray of Warm Water.

7. Steam Baked it at 150ºC for 2-2½ hours.

8. Cheese cake is cooked when top is firm. Leave to cool for 30 mins and keep in fridge for a few hours before serving.

i just leave munching and eating cheesecakes, they are tasty and yummy`~;
