Pineapple Cookies by aunty loh

I super duper extremely fall in love with Pineapple Cookies! But due to its high selling price, most of the time i only see it and air liur meleleh without buying it. So, I have wanted to make Pineapple Cookies since long looong loooong time ago liao. I have obtained all the information from friends to colleague, searching online, refers to book, newspaper, magazine and TV show. And Today Finally i have taken one step forward to bake it myself! Ngek Ngek Ngek! Remember, its 100% ORIGINAL MAKE BY AUNTY LOH HERSELF without anyone helping! My mum so bad, she rather sit outside watching movie also don’t want to give me a hand! But nvm, she ALWAYS trust my baking skill. Furthermore, i don’t like people to disturb me when i am doing serious and important task! :lol:

So, share with u all the recipe again. KEKE.

The main Raw Materials for pineapple cookies of course must be PINEAPPLE! Pineapple paste plays a very  important roles to the overall taste. And it is the most difficult part in the whole process. I have almost spent 5hours just to cook the paste! *Pengsan*

1. I used three pineapple.

2. Clean the skin. (Awwwwwwww….It is the most difficult part! My Energy, patient and attention all are being tested in this part! KNS! Next time must buy the already cleaned Pineapple, no matter how big different is the price! Since this is my 1st time to bake this cookies, i must show my sincerity by doing every step MYSELF :D )

3. Grated the pineapple. ( Some ppl may like to blend it. But i don’t like. It may become too creamy instead of crunchy)

4. Mix 3cm of Cinnamon Stick, 2 cloves and 1 tbsp lime juice into it.

5. Put 300g of sugar.

6. Cooked it with low fire (to prevent it from burning). Stir it every second until it is dry.

7. Ta Da! It is ready when it turns into golder brown colour and dry. Take it out and leave it cold. (KNS. I have spent almost 3 hours just to stand infront of the wok and stir it until dry! I think now my Right Arm got the Muscle like Popeye Sailorman edi! :neutral: )

8. Now we have to prepare the ingredient for the crust pasty.

Ingredient needed:-

250g     Butter
50g       Icing sugar
360g    Plain Flour
2 tbsp   Custard Powder
1            Egg Yolk
1tsp      Vanilla Essence

9. Mix all the ingredient all together to form a dough and leave it for 30Minutes.

10. There are many ways to shape the Pineapple cookies.

A) The first method with Heart Shape :P ( my own creation)

Tips: Remember to glaze the cookies with beaten egg. (to make the cookies look shinning :D )

B) The 2nd method i.e. the most common way like what is selling outside. The roll shape.

Tips: Lightly cut some pattern on top of it to make it looks nice! KEKE.

11. Bake at 170 Celsius for about 20minutes until golden brown. Leave to cool before storing.

Chiang chiang Chiang! This is the overall cookies!

Awww…. this is really delicious from the bottom of my heart!!!! My youngest brother keeping curi makan when i am baking. This means that it is really nice loh! Otherwise he won’t continue to eat after the 1st piece. KEKE. Before i bake this, i used to steal the recipe tips from colleagues by asking this and that, and they used to gimme a respond like:-

” Arhem.. Ms Loh, u know baking 1 meh?”
“Are you serious? it is really difficult and complicated to bake 1,  need alot of KUNGFU 1 woh!”
Ms Loh, U know or not gah?? Don’t play play ah!”

I promised to reserve a tin for them after cny come back to work. Guess what their respond?

“Ms Loh ah..there is two possibilities u will reserve for us:-
1st- U are really kind enough to keep a tin and not to forget give us a try.
2nd- The cookies are taste too bad. Nobody want to eat. No choice, u have to bring it into office and hoping we will help u to finish it.”

Awww…..they have too little understanding and seriously lack of confident on me! I learn to bake with my mum since i was a little girl okey? The first time i bake myself without anyone helping is 13years old okey? I love baking okey? I am not 千金小姐 okey? I bake even well than my mum okey? (coz she is still stick with outdated recipe. hehe), I am the 2nd chef at home after my mum okey?

Anyone interested to try Aunty Loh’s brand homemade Pineapple Cookies? HAHA. Pls come to  visit me during Chinese New Year la! Don’t forget Gimme Ang Pao woh! KEKE. But if u pantang to gimme angpao since u not yet marry, then u can “purposely” or “intentionally” lose in gambling and let me win CONTINUOUSLY la! muahahahha  :lol:

vince, 其实应该只是要搽蛋黄的,那本食谱教错人!我发觉后,过后的几个Batch,颜色也比较美了!呵呵呵呵
